Corn Tuna Burgers
A low-fat alternative to beef burgers. Try it with chili salsa for an extra burst of flavor.
Ingredients
- 85 g white bread, torn into pieces
- 200 g drained canned corn
- 2 cans of tuna, well drained
- 25 g grated cheddar cheese
- 3 spring onions, finely chopped
- 1 beaten egg
- 2 tablespoons vegetable oil
- Whole grain buns, salad, salsa, for serving
Procedure
STEP 1
Process the bread in a food processor until it becomes crumbs, transfer to a bowl, and finely blend half of the corn. Add the chopped corn, remaining whole corn, tuna, cheese, spring onion, and some seasoning to the bowl with the bread and mix well. Gradually add the egg (you may not need it all) until the mixture is sticky enough to form four equal-sized burgers.
STEP 2
Heat oil in a non-stick pan and fry the burgers for 5 minutes on each side until golden and hot in the center. Serve them in whole grain buns with your favorite salad and a generous portion of salsa.
