Corn Salsa
This vegetarian side dish is very quick to prepare and pairs perfectly with jalapeños, cilantro, lime, and feta.
Ingredients
- 4 corn cobs
- 2 chopped tomatoes
- ½ red onion
- 1 red bell pepper
- 1 avocado
- 1 jalapeño pepper, finely chopped
- A handful of cilantro, roughly chopped
- Juice of 3 limes
- 75 g feta cheese
Procedure
STEP 1
Boil the corn for about 5 minutes or until tender. Cool under cold water and drain thoroughly. Cut the corn off the cob and place it in a large bowl. If you have canned corn, you can continue with that directly.
STEP 2
Add the tomatoes, onion, red bell pepper, avocado, and jalapeño pepper – all finely chopped. Add the cilantro, lime juice, and seasoning, and mix well. When serving, sprinkle with feta cheese.
