Ingredients
- 4 whole corn cobs
- 80 g salted butter
- 1 teaspoon spicy smoked paprika
- 2 limes, halved
- 20 g Parmesan cheese, grated
- 1 tablespoon vegetable oil
- A handful of cilantro for garnish
Procedure
STEP 1
Bring a large pot of salted water to a boil, reduce the heat to medium, and cook the corn on the cob for 10 minutes. Meanwhile, prepare the paprika and lime butter. Mix the softened butter with the paprika. Stir in half of the lime zest and half of the Parmesan cheese.
STEP 2
Light the grill or heat a dry skillet over medium heat until hot. Dry the corn and lightly coat it with oil. Cook for 7-10 minutes on the hot skillet or grill, turning every few minutes, until golden and slightly charred in spots.
STEP 3
Remove the corn to a plate and spread it with the paprika butter. Sprinkle with the remaining Parmesan, cilantro, and the rest of the lime zest. Serve with lime halves for squeezing.
